Butterscotch Pumpkin Cookies

Last night I made a batch of these Butterscotch Pumpkin Cookies, and I must say, they’re pretty delicious. They were a little too sweet for me so I added some oats (probably a little over a half a cup) which didn’t mess too much with the texture but took away some of the overwhelming sugar flavor.

Keep in mind though, I don’t know if you can get butterscotch without artificial flavoring. I was kind of bummed but I really wanted to try these out.

P.S. I should also mention I used whole wheat flour and olive oil and they still tasted really good.
