From-Scratch Huevos Rancheros*

*or at least that’s what I’m calling them

I was going through a period of intense cooking obsession and decided I wanted Huevos Rancheros. I’d only ever had the from-the-can kind, with canned green chilis and canned tomatoes and grocery store tortillas. I wanted to do it my own way.

And they were amazing.

I Used This Tortilla Recipe

Huevos Rancheros

Three large roma tomatoes (any tomato will work, really)
Spicy pepper, amount at your discretion
Onion, amount at your discretion
Olive oil
Salt
Pepper
Cumin (tiny bit, to taste)
Chili Powder (tiny bit, to taste)
2 eggs per person (or however much you want)
Cilantro (optional but delicious)

Prepare tortillas.

Olive oil, chopped onion in pan. Cook. Add in chili pepper. Cook. Add in cut tomatoes (the smaller you cut them the better you can mash them with a big spoon.) Salt. Pepper. Cumin, chili powder. Mix in some cilantro or just serve it on top. Make your two eggs (you can use my magic trick). Layer tortilla, egg, tomato sauce you just made. Add a little cheese if you want it. Indulge.
